Recipe Ideas this week:
I can’t get enough of our local king salmon! It’s so healthy and fresh. I would suggest baking it in the oven with cipollini onion and fresh dill. It’s also good with the corn or the mushrooms or grilled and served on a salad.
The eggplant caviar we made will be good as a spread on the baguette. Maybe toast it first and drizzle a little extra virgin olive oil on there.
The corn would be great in a salad with the sungold cherry tomatoes and arugula. Lemon and olive oil to dress it and a little salt and pepper…or paprika if you like it a little spicy.
With the chicken this week, we thought we would make a sauce of sauteed mushrooms and english peas to go with it. Leeks are also good with chicken. You could bake them alongside the chicken in the oven.
My favorite way to prepare leeks is to cut them up and simmer them in a tiny bit of water or butter with garlic. if you have some, you can finish it with a little cream.
Carnitas is one of my favorite ways to make pork shoulder. It was slow cooked with grapefruit and lemons, cumin, salt, bay, peppercorns. We included some tortillas so you can make tacos with it or have it with eggs in the morning for a hearty breakfast. You can heat it up in a pan until it gets a little crispy.
Bread and butter pickles always make me think of summer. They go great with any grilled meats or sandwiches.
